At Ruby Red’s, homemade isn’t a slogan—it’s our standard.
Nearly everything we serve is made from scratch, in-house, every day, using clean, whole ingredients. That includes our meats, side dishes, desserts, BBQ sauces, salad dressings, breakfast items, pancake batter, chocolate ganache, lemon curd, beignets, and fresh herb garnishes. Nothing arrives pre-made. Nothing is simply reheated.
Every item on our menu—from sides to desserts—is prepared using original Ruby Red’s recipes, developed in-house and refined over time. This is increasingly rare in today’s restaurant industry.
Many restaurants, especially large chains, depend on prepackaged sides and desserts, centralized production kitchens, and ingredients designed for shelf life rather than nutrition. That often means preservatives, fillers, stabilizers, artificial colorants, and shortcuts. Even in barbecue, it’s common to see meats cured with nitrates and additives intended to improve appearance and storage, not quality.
That’s not how we do things.
At Ruby Red’s, food is prepared daily, quality is controlled in our own kitchen, and nothing is mass-produced. Even our environment reflects that same philosophy—our décor, tables, cutting boards, serving platters, and design elements are custom-built or handcrafted, reinforcing the care and intention behind everything we do.
It takes more time. It takes more effort.
But it’s why Ruby Red’s tastes different—because it is different.
employee spotlight
This month, we’re pleased to spotlight Carlos Bermejo, a valued member of the Ruby Red’s team who has been with us since September 2024. Carlos works as a Dining Room Ambassador, a role he approaches with consistency, care, and a strong sense of teamwork.
Originally from Mexico City, Carlos grew up surrounded by a rich mix of cultures that shaped his appreciation for people, food, and community. Outside of work, he enjoys reading and writing, pursuits that reflect his thoughtful and creative nature.
Carlos says what he values most about working at Ruby Red’s is the shared commitment among all employees to provide excellent customer service. That collective pride in doing things right is something he’s proud to be part of every day.
When it comes to the menu, his favorite item is our BBQ ribs—a classic choice. If Carlos ever won the lottery, his first priority would be helping his family, a reflection of his grounded values.
Looking ahead, Carlos has a clear goal: to open his own restaurant one day. We’re proud to be part of his journey and grateful for the dedication and positivity he brings to Ruby Red’s.
