Layered above the chandelier, pig-trough–style wood-clad planters add another chapter to the story — blending rustic utility with intentional design. Rope, wood, crystal, and craftsmanship all stack together, creating a vertical moment that feels both cinematic and deeply rooted in tradition.

Amanda did an amazing job helping us out! She was welcoming and helped explain the items and gave good recommendations. We appreciated her! The food was great, everything was delicious. I got fried pickles to start, they were the best!! (I went with a pickle HATER and he couldn't stop eating these either) I got the brisket platter with fries and Mac n cheese. For dessert we had beignets, which were super fluffy and delicious. We also got some cookies to-go, they were warm and soft. 10/10, definitely will be going back!

For Alex Clotter, nature is more than a backdrop — It’s a source of peace. Camping in the quiet of the outdoors is where I feel most grounded, a reflection of my deep appreciation for simplicity and balance.” Originally from Honduras, Alex proudly carries with him the richness of a country known for its breathtaking landscapes, natural spas, and incredible culinary traditions. That heritage fuels a genuine passion for food and a desire to continue growing in the culinary field.

A true food lover at heart, Alex enjoys a wide variety of dishes, with a particular fondness for steaks in all their different cuts. Looking ahead, he hopes to see that love for bold, flavorful cuisine reflected in future Ruby Red’s menus — especially at new locations — offering guests even more variety to enjoy. For now, though, he’s a devoted fan of one thing above all else at Ruby Red’s: our breakfasts.

When asked what he would do if money were no object, his answer shows both growth and vision. Having learned a great deal along the way, Alex now dreams of creating a chain of restaurants that blend Texan, Italian, and Latin American cuisines — all anchored by exceptional service. To him, great hospitality isn’t just about the food; it’s about everything from impeccable hygiene to greeting guests warmly when they arrive and sincerely wishing them a wonderful rest of their day when they leave.

At his core, Alex’s aspiration is simple but powerful: to become a better version of who he was yesterday. He values self-reflection, understands that none of us are perfect, and cherishes moments of solitude as a way to grow thoughtfully and treat others with care. That mindset — intentional, respectful, and service-driven — is exactly what makes Alex such a meaningful part of the Ruby Red’s family. We love him.
