Have you ever wondered about the cowboy/cowgirl hats that adorn the walls of our restaurant? Have you ever noticed that our dining chairs are unique and of varied styles? So, what’s up with that? The hats and the chairs are a part of our Ambassador Program at Ruby Red’s.

Hats Off to You - Ambassadors

Each hat displayed at Ruby Red’s has been donated by official Ruby Red’s Ambassadors who were once just followers of our dream. They decided to stand with us as examples in our effort to promote a sense of giving in our community to those around us. These hats each have a story from their owners, both living and deceased. Each hat is unique, yet part of a group. Each hat has its own beauty and provides protection. Each hat is special and has a purpose. These hats are like our guests that come to eat at Ruby Red’s. Each is unique, each is beautiful and each is a part of our family. We hope that the time you share with us makes you feel as special as we think you are. Here is to taking “One Step Forward”, together.

Take My Seat - Ambassadors

As you look around our dining room, you’ll notice that our wooden chairs are not all the same. Each chair is unique, each chair is special, and each chair serves a purpose. Each chair provides rest and support, and each chair has beauty. Although each chair is an individual on its own, they join together to form a family of chairs to serve those who enter our home. Our chairs are donated by official Ruby Reds Ambassadors for the enjoyment of our guest as a small example of giving. Our thoughts about our chairs are the same as our thoughts about every person we meet. We love the flaws, the dents, and the natural patina that each of us develop from our years of living. We love the scars, the age spots, the stretch marks, the sags and the wrinkles. We love the opinions and the passions that we develop along our journey here on earth. We love how knowledge and experience, both good and bad, evolve into wisdom. And most of all, we love when that wisdom and all of our talents are used as we take one step forward together serving those around us.

Did you know that you too can become an Ambassador of Ruby Red’s? All it takes is a token of giving in the form of a hat or a chair, both new of used. Hats will be placed on the wall of our restaurant with a brass plaque displaying your name of choice. Chairs will become part of our dining room on a rotating basis as long as they last. In return for your gift, you will be given a gold Ruby Red’s Ambassador coin. Going forward when showing your coin, 10% will be taken off of all that you purchase at our restaurants. You will then be an official Ambassador with added recognition and special treatment at our restaurant. Let me tell you about Jhonny Clotter, the restaurant manager of our Ruby Red’s BBQ in La Habra. As the one required to make sure everything runs smoothly, Jhonny is a pro. His hobbies include playing soccer with his friends and riding his really cool motorcycle which is his form of relaxation. Family has always been a priority. His 3 amazing kids are his life’s motivation, and they keep him striving to reach his goals for their benefit.

Jhonny grew up in Honduras until he was 10 years old. He then moved to Mexico to be with his lovely grandmother who was always there for him and was a big part of his childhood. Jhonny is a wonderful manager, but he believes that his greatest talent is cooking. As a chef, he puts his passion into every dish that he makes and teaches others to do the same. He loves the environment at Ruby Red’s which challenges him daily. With those high standards, Jhonny knows that the end product reflects back on him. With that in mind, he puts focus, effort and love into everything he serves.

We appreciate his personal touch on the presentation of each meal and in all that he does. Jhonny “loves making food that keeps people coming back for more.” He loves our crew and the great opportunity he has been given to be a part of Ruby Red’s. His favorite combo at the restaurant is Pork Ribs with sides of Mac & Cheese, Brisket Beans and Coleslaw. If he won the lottery, he would first help his family and then invest into his dream of being the chef of a restaurant of his own. We are lucky to have such a wonderful person as our manager, and we look forward to watching him reach his goal of opening his own restaurant in the future.

MENU HIGHLIGHT

Did you know that we serve fresh, made-to-order Southern Beignets at Ruby Red’s? Short of a trip to Downtown Disney, these are hard to find around our parts. These are a delicious part of our Southern menu due to the fact that they are a favorite of our founder, Steve Williamson.

Beignets, the square, fried fritters dusted with powdered sugar, have a rich history rooted in France and deeply intertwined with New Orleans culture. They are believed to have originated in France, possibly drawing inspiration from ancient Roman fried dough, and were brought to New Orleans by French colonists in the 18th century. Over time, they became a beloved staple of New Orleans cuisine, particularly associated with Café du Monde.

Sometimes referred to by the French as fritters or choux (shoe) pastries, these unique, semi-square delicacies are made from a yeast-raised dough, deep fried until golden brown and topped with confectioners' sugar.

At Ruby Red’s we serve our Beignets with a choice of our homemade artisanal dipping sauces, Chocolate Ganache, Crème de Citron Lemon Curd and Crème Caramel. Our customers agree that these Beignets alone are worth a trip to Ruby Red’s.
